I like traditional sugar cookies, but sometimes it’s fun to dress them up a bit, and these cinnamon sugar cookies do just that!
You could even mix this dough ahead of time and freeze it in portions for easy homemade cookies anytime.
**adapted from Country Crock
- 2 large eggs
- 2 sticks butter
- 1 cup sugar
- 1 tablespoon vanilla extract
- 3 cups all purpose flour
- 1/2 tsp ground cinnamon for sprinkling
- 2 tablespoons sugar for sprinkling
Beat butter and sugar for 2-3 minutes, until light and fluffy. Separate one egg and set egg white aside. Add remaining egg plus the egg yolk and vanilla extract and beat until well blended. Slowly beat in flour.
Divide dough into four and wrap each in plastic wrap. Chill until firm, at least two hours.
Preheat oven to 350 degrees.
Remove one portion of dough from the fridge, unwrap and roll out on a floured surface until dough is 1/8″ thick. Use a shaped cookie cutter to cut out your cookies and place them on parchment paper-lined cookie sheets with plenty of room to spread.
Repeat with each portion. Lightly beat the remaining egg white and use a pastry brush to lightly brush the top of each cookie. Mix together cinnamon and remaining sugar and sprinkle over cookies.
Bake 10 minutes, until the edges begin to brown. Remove from oven and let stand for 2 minutes before moving cookies to a wire rack.
