101 Days of Christmas: Creamy Sugar Mints

These creamy sugar mints are perfect for serving at a holiday party or giving as a hostess gift in a cute box or tin. They’re simple enough that your kids could help, and a yummy treat that will keep in the fridge for several weeks!

Ingredients:

  • 3 Tbsp reduced fat cream cheese softened
  • 14 tsp mint extract
  • 4 to 4 12 cups confectioners sugar
  • 14 cup granulated sugar
  • food coloring optional

Directions:
Beat cream cheese for two minutes until soft and fluffy. Add mint extract (and food coloring if using it) and mix well.

Slowly add the confectioners sugar, 1/2 cup at a time, to form a stiff mixture.

Make small 1/2 teaspoon size balls. Roll them in the granulated sugar and then flatten with a fork.

Keep refrigerated.

    Mmmm.  These bring back memories!  My grandma had little molds for every occasion and all of us grandkids would help her make them.  We added butter flavor as well for buttermint flavor.

      Hey Wendy! It definitely has its challenges but having an editorial calendar and working ahead are making it a fun experience rather than a stressful one…at least so far! Two-and-a-half more months to go, LOL.
