Mmm…I wish I could share the taste of this caramel corn chex mix with you right through the screen! Since that technology doesn’t yet exist (that I know of, at least!), you’ll have to just trust me on this one.
I’ve had a lot of fun testing out various holiday-flavored chex mixes this month, and this one is by far my favorite. I basically hid it from the kids so I could eat it all myself, and while it doesn’t have any dark chocolate in it, it’s that good!
I am planning to make batches and batches of this for our appreciation gifts for delivery drivers, Sunday school teachers, doctors and more, if for no other reason than to sneak a few bites from each batch!
Ingredients:
- 4 cups stove-top popcorn, popped
- 4 cups Corn Chex
- 1 cup peanuts
- 1/2 cup butter
- 1 cup packed brown sugar
- 1 tablespoon water
- 1/2 cup white chocolate baking chips
Directions:
Preheat oven to 250°F.
In large bowl, combine cereal, popcorn and peanuts. Add butter to a 9×13 pan and put in oven to melt. Once melted, stir in sugar and water until well mixed. Add cereal mixture, stirring until evenly coated.
Continue baking for one hour, stirring regularly.
Remove from oven and immediately add white chocolate baking chips. Stir until the chips melt and coat the mixture. Let cool. Store in an airtight container in the pantry.
